Tasting Menu at Aromata by Andreu Genestra
At Aromata, chef Andreu Genestra and head chef Edgar Rodríguez sign a Mediterranean, Mallorcan-rooted tasting menu on the ground floor of the HM Palma Blanc hotel in central Palma. The kitchen works produce from its own rooftop urban garden and from Genestra's 2,500 m² orchard in Llucmajor, alongside island suppliers such as Can Company for charcuterie and the Amadip Esment foundation for artisan bread. Evening service runs three tasting menus — the shorter Aromata menu, the longer Sentits menu, and a vegetarian Verd option — each pairable with wines from the restaurant's own cellar, curated by sommelier Giorgia Scaramella. A shorter, more casual menu is also served at midday. Aromata is recommended in the Michelin Guide and holds a Repsol Sol.
